Mushroom Medley きのこスープ

This vegan mushroom soup features four types of mushrooms commonly found in Japanese dishes: Shimeji, Enoki, Shiitake, and King Oyster. The umami flavors are steeped in a vegetable dashi base then soaked up by fried tofu for a light but highly aromatic meal! Pairs well with soba or rice.

Note: Due to ongoing supply shortages, soba noodles are unavailable until further notice.

Ingredients: Mushrooms (organic king oyster, enoki, shimeji, shiitake), abura age (tofu), ginger, onion, garlic, carrot, kombu, scallions, bay leaf, mirin, sesame oil, soy sauce, salt.
